Ha esordito come cantante ed autore con i Milk and Coffee, iniziando la sua attività nel 1977 con il singolo GOOD BYE SAN FRANCISCO che nel retro aveva il brano PUGNI, DOLLARI E SPINACI, tema del film omonimo. Nel 1978 pubblica il secondo 45 giri LADY BLUE, con il brano adottato come sigla del programma radiofonico ALTO GRADIMENTO di Gianni Boncompagni e Renzo Arbore; nel retro del disco è presente il brano WELCOME TO ITALY. Nell'estate del 1979 pubblica un terzo 45 giri SWEET MELODY: la prima traccia è un brano disco, mentre sul retro è presente Cinderella; in questo periodo il suo ex gruppo era paragonato ai Boney M. italiani. Del 1979 è anche il primo album, INDIANAPOLIS, che ripropone anche i testi del 45 giri precedente, uscito pochi mesi prima. L'album alterna brani disco, quali INDIANAPOLIS, SWEET MELODY ed ANGEL EYES a brani pop come LITTLE SANDY E MISTER GOLD e melodici come ISLAND MAN e CINDERELLA; Indianapolis è inoltre adottato come sigla della trasmissione televisiva A TUTTO GAG, trasmessa nel 1980 su Rai Due, nella quale furono presenza musicale fissa. La pubblicazione del primo album è seguita da un lungo tour in Europa e in Sudamerica (Argentina, Cile, Perù e Venezuela), dove incontrerà un buon successo di vendite. Nell'estate del 1980 partecipa con i Milk come ospiti d'onore al FESTIVAL DI VIGNA DEL MAR in Cile. Nel 1981 pubblicano un quarto 45 giri SEXY LOLA che presenta sul retro il brano FEVER, nello stile della disco music. Con Sexy Lola partecipano all'edizione del 1981 di FESTIVALBAR, cui segue un nuovo tour in Sudamerica che tocca Argentina e Perù e Cile Nel 1982 parteciparono al FESTIVAL DI SANREMO con il brano QUANDO INCONTRI L'AMORE, loro primo brano in italiano, che si classifica al sesto posto; alla partecipazione a Sanremo seguì il 45 giri QUANDO INCONTRI L'AMORE, con Ti amo sempre più come seconda traccia e il 33 giri Milk and Coffee che contiene una cover in spagnolo di MARINA di Rocco Granata, oltre al brano sanremese, ai già pubblicati SEXY LOLA e FEVER ed altri brani inediti in italiano, tra cui spiccano L'AMORE VIENE E VA e CI SEI TU. L'album è prodotto anche per il pubblico spagnolo e sudamericano, con versioni in spagnolo dei brani (Cuando llega el amor e Te quiero mas que ayer). Nel 1983 pubblicano il singolo CANTERÒ, accompagnato da DANNY, estratto dal 33 giri Milk and Coffee. Canterò incontra un buon successo in Francia tanto che fu incisa anche da Karen Cherill famosa cantante parigina con il titolo di BEAU C'EST BEAU che rimase per mesi nella hit francese e belga; cavalcando quell'onda viene ripubblicato come 45 giri: CANTERÒ/L'AMORE VIENE E VA proprio per quel mercato. Nel 1984 ritornano con la presenza fissa in una trasmissione televisiva, con i Passengers e i Pandemonium, ospiti del programma BUON COMPLEANNO TV ideata e condotta da Pippo Baudo in prima serata su Rai Uno; per l'interpretazione del brano "IL CIELO IN UNA STANZA" di Gino Paoli ai Milk and Coffee viene assegnato il primo premio da parte della testata giornalistica della Rai. Da questa esperienza deriveranno il 33 giri: Buon Compleanno TV e l'album Ricordi, entrambi del 1984. Nel 1985 i Milk and Coffee sono ospiti fissi il sabato sera del programma Night and Day su Rai Uno. Analogamente all'esperienza del 1984, pubblicarono l'album NIGHT AND DAY, raccolta in chiave moderna di brani famosi. Il brano disco Silhouette è diffuso a scopo promozionale nell'estate del 1985, ora dopo diversi anni Giancarlo Nisi si rimette in gioco da solista tornando alle sue origini di cantautore.
